			<content:encoded><![CDATA[<p>Last weekend I discovered I had some Bartlett pears and most of a bottle of wine in the fridge that needed to get eaten. Both were still good, but wouldn&#8217;t be so for long. Immediately I thought of making Poached Pears. I hit the FoodTV site for a <a href="http://mobile.foodnetwork.com/details.do;jsessionid=ABD2FBCA646FF244A859C6FD2619C125.hyper-1?id=3609&amp;text=Poached+pears&amp;search=all&amp;pr=1&amp;emvcc=false">recipe</a>, which I used as the basis for my creation.</p>
<p>The wine was a sweet white from <a href="http://www.fiorewinery.com/wine.asp?id=16">Fiore</a> winery in Maryland. We picked it up at our friends Mike and Nikki&#8217;s wedding back last year.</p>
<p>I deviated heavily from the FoodTV recipe and the results were spectacular. Here&#8217;s my version of the recipe:</p>
<ul>
<li>4 firm Bartlett pears</li>
<li>1 bottle, less 1 wine glass full, Fiore Malvasia Bianca Dolce</li>
<li>1/3 to 1/2 cup of sugar</li>
<li>6 peppercorns</li>
<li>1 vanilla bean</li>
</ul>
<p>Unlike all other Poached Pear recipes I&#8217;ve seen, I broke down the pears into 1/8 sections. First I peeled and quartered them and removed the core and seeds. Then I cut them across the width to make them all about the same sized chunks.  I&#8217;ve always had a problem with the standard recipe because the insides tend to be raw while the outside is falling apart.</p>
<p>I put the pears in a small sauce pan so I could keep the height of the liquid as high as possible. I emptied the bottle of wine in the pan and turned the heat to one notch over medium. I dumped in the remainder of sugar from the coffee service, which is why I don&#8217;t know exactly how much went in the pot. To this I added 6 whole black peppercorns and a vanilla bean.</p>
<p>I split the vanilla bean in half and scraped out the insides. I learned to do that from Alton Brown. I don&#8217;t work with whole vanilla beans, and while they&#8217;re expensive, it made the dish truly awesome. I put the casing and the insides of the bean in the pan and covered until it started to simmer. Then I took the cover off and let it cook just over a simmer. I guess you&#8217;d call it a low boil.</p>
<p>After 10 minutes I checked the pears and they weren&#8217;t tender enough. I checked them again 5 minutes later and they seemed all right. In hind sight, I would have given them another 5 minutes because some of the pieces weren&#8217;t completely tender. This gives me an estimate of 20 minutes.</p>
<p>Once done I removed the pears with a slotted spoon and put them in a tupperware container which I sealed and set aside. I then strained the liquid to remove the vanilla bean and peppercorns and put it back on the heat. I reduced the sauce to a syrup.</p>
<p>As it turned out, the pears had a expressed a lot of liquid while cooling the the tupperware. When I mixed the syrup back in with the pears it got soupy again. So I poured off all the liquid and reduced it again until I was returning a nice thick syrup back to my cooled pears. You might want to wait for the pears to cool and pour their liquid back into the sauce pan before doing the reduction.</p>
<p>We at these as is, with syrup, and over vanilla ice cream and angel food cake. We tried them hot and cool and both were awesome. The potency of the syrup seemed to fade over the course of a week, so I wouldn&#8217;t keep them around for more than 3 days. I just can&#8217;t eat that much fruit in one sitting.</p>
<p>This recipe is awesome. Don&#8217;t skimp on the vanilla bean. It really makes the whole thing worth while.</p>
<p>I plan on trying this again, but I&#8217;ll probably double the recipe. It&#8217;s a lot of work for just 4 pears and 8 pears worth would be better.</p>

			<content:encoded><![CDATA[<p>In the grand tradition of the Internet, I&#8217;ve started up a fund to right a wrong. <a href="http://jaredaxelrod.com/">Jared Axelrod</a> is one of the most creative people I&#8217;ve ever met. He is simply awesome. About a year ago he purchased my old Apple G4 Powerbook from me. I was really excited at the prospect of him being able to create new and wonderful things to share while on the road.</p>
<p>Unfortunately the laptop screen got broken in an accident a short time later and the machine, while still operational, is anchored to his desktop by a large and clunky monitor. No longer can he create on the go as the universe intended.</p>
<p>So I implore you, please help us get Jared&#8217;s laptop fixed. I found a company in California that will repair it for $250. I expect he&#8217;ll have to spend between $30 and $50 boxing it up to travel safely as well as for postage and insurance. So I&#8217;ve created the ChipIn.com fund for a total of $300 (less PayPal fees). <em>[NOTE: I couldn't figure out how to have Chipin.com show our donation, so I lowered the original amount to reflect our gift.]</em></p>
<p>Anything you can spare would be a great help. Please consider give a few bucks to help him get his mobile mojo back in gear. Every $5 or $10 you can spare will get him closer to creating more wonderful things without being anchored to a monitor.</p>

<p>My friend, Greg Seidman, has released his first game for the iPhone. Circuits, is a cool game where you rotate parts on the board trying to form a circuit before time runs out. I&#8217;ve been testing the game for months and I really love it. You can find out more about Circuits <a href="http://appshopper.com/games/circuits">here</a>.</p>
<p>The game is addictive. I&#8217;ve played it for hours and that&#8217;s saying something for Mr. A.D.D. Usually I put iPhone games down after a short time. But not Circuits. Give it a try, I&#8217;m sure you&#8217;ll love it.</p></div>

Andy from the <a href="http://www.bazmakaz.com/andycast/">Andycast</a> tagged Dani Cutler from the <a href="http://audioaddict.libsyn.com/">Truth Seekers</a> podcast and Dani tagged me. The meme is you have to go to your 6th page of flickr photos, and blog about the 6th picture. <p>I have a ton of family only and friend only pictures on my Flickr feed. I chose to use the 6th picture on the 6th page that a non-friend/family person would see. If you go to the 6th photo on the 6th page and don&#8217;t see this picture, then you&#8217;re a friend or family member on Flickr, so you see pictures of mine that most people don&#8217;t see.</p>

<p>Balticon has been an anchor in my life almost immediately from the time I moved to the D.C. area. I has been my favorite con for over 15 years and about a decade ago I started volunteering my time to help run the it. I started out helping CZ run computer gaming, and eventually took over the reigns as his personal life got more complex. When my interest in computer gaming waned I started the podcasting track and the Balticon Podcast.</p>
<p>This turns out to be one of the best things I&#8217;ve ever done. The podcasting track morphed into the new media track and now includes blogs, podcasts, and web comics. I&#8217;ve met and become friends with a huge creative community which enriches my life on a daily basis. I can&#8217;t remember a time when I&#8217;ve had so many friends all over the world with whom I&#8217;ve been able to create new and better things.</p>
<p>The first year we had the podcasting track at Balticon, someone wanted to have blue crabs. I think it might be <a href="http://murverse.com/">Mur Lafferty</a> who made the initial suggestion. Since then a blue crab feast has become a regular event for the podcasters at Balticon. </p>
<p>For Balticon 42, <a href="http://strangerthings.tv/">Earl Newton</a> is the one who really made it happen. He got everyone together, placed the order, wrangled the crabs, and found us a place to eat. The large paper bag is full of steamed spiced Maryland goodness. </p>
<p>Where do you ear blue crab? First you go to Maryland because they make the best. Ideally, blue crabs are eaten outside and with beer. A good crowd of friends always makes the meal that much sweeter. </p>
<p>How do you eat a blue crab? Then you get some plain brown paper for a table cloth and a big wooden mallet. You open up the body of the crab like a pop top soda can and get the mustard and good body meat. Then you take the mallet and smash the claws to get the delicious claw meat. If you&#8217;re a pro, you can get a little meat from the legs. I am not, so I skip them.</p>
<p>Don&#8217;t bother washing up until you&#8217;ve had your fill. Maryland blue crabs, eaten this way, are messy. Downright delectable, but very very messy.</p>
<p>Our yearly crab feast is always one of the high points for me. I expend so much energy getting the track coordinated and getting recordings for the Balticon Podcast, that it really matters to me that I get to sit down with my friends and peers and just enjoy the company and the meal.</p>

<p>A free book? There&#8217;s no such thing as a free book! What&#8217;s the catch?</p>

But, Mur asks that if you like it you purchase it from Amazon.com on August 25. She&#8217;s making a run on Amazon and really needs us all to pitch in and help her get noticed. She, like so many others, has a book contract now. But podcasting novels are still a new medium for delivery and we need to show the publishing industry that this makes a difference. </p>
<p>Martha and I have read the PDF version multiple time. We help Mur by making the PDFs and doing layout and formatting. We also did a little editing. All of this was to help Mur make the best product possible. We bought the first version of <em>Playing for Keeps</em> when it was self-published on Lulu.com. And now we&#8217;re joining her for her run on Amazon and we&#8217;ll be buying multiple copies of <em>Playing for Keeps</em> as published by <a href="http://swarmpress.com/">Swarm Press</a>.</p>
<p>Mur has delivered countless hours of enjoyment and encouragement to the pod-o-sphere. She has also inspired and rallied people including me. It is not an exaggeration to say that if Mur wasn&#8217;t here I wouldn&#8217;t be either. I wonder how many other people to whom you listen, read, and watch are here because they were inspired by Mur Lafferty. I&#8217;m guessing the number is larger than you think.</p>

My Mac dictionary defines affectation as behavior, speech, or writing that is artificial and designed to impress. By definition, if I wear t-shirt and jeans as my default uniform, it is not artificial and definitely not designed to impress.</p>
<p>When I first started my career I bought the book &#8220;Dress for Success&#8221;. I followed it reasonably well, sticking with suits, slacks, button down shirts, and ties. I allowed myself black sneakers instead of shoes because of foot problems. It wasn&#8217;t long before I realized that my job required me to climb under people&#8217;s desks to fix their computers. At this point I switched from suits and slacks to Dockers which held up better.</p>
<p>Regardless of my chosen uniform for work, I still changed into my preferred jeans and t-shirt when I got home. Jeans and t-shirt are not artificial for me. They are my default state. My chosen garb. The suits, slacks, button down shirts, and ties are the affectation.</p>
<p>I&#8217;m a large guy. Usually I can&#8217;t find cloths that make me look good unless I work very hard. I have never found anything second hand that fit me remotely well, and I have spent hours in thrift shops. I usually can&#8217;t find much that makes me look good in the stores unless I go to a big and tall man&#8217;s shop. The cost of acquisition in time and money is rather large for a whole wardrobe. The cost of maintenance is as well.</p>
<p>I think you missed one opportunity this provides us rebels. By the American work force getting more relaxed I think the rebels will turn to suits and ties to show their rebellion, thus standing society on it&#8217;s head. The new punk may be the old IBM dark suit, white shirt, red tie, and black shoes.</p>
<p>I was the first of my group of friends to adopt the golf shirt and jeans as a uniform. Maybe it&#8217;s time for me to rebel again and start looking for some good looking blazers.</p>

<p>Well said. But there is a point that I think you and Jared both missed. For the last 20 years or so I&#8217;ve been the chief computer expert in my various jobs. I discovered way back that customers expected me to look a particular way before they would really take me seriously. It was a personal style that screamed to them uber geek.</p>
<p>While my sales and marketing associates were taken seriously wearing a suit and tie, I got the best results looking rather unkempt. I affected a ponytail which looked awful no matter what I did, and went for a full beard and mustache before trimming back to a goatee. If I dressed in a suit I would be ignored. But when I dressed in golf shirt or t-shirt and jeans I was instantly identifiable as the tech genius.</p>
<p>Contrary to Jared&#8217;s main point, I was more successful when I fit the mold of what the customer thought a tech guy should look like. When I tried to look debonair I was not taken seriously.</p>
<p>I believe the thinking back then went like this: &#8220;He looks like a mess, but they still employ him. He must be highly competent or he couldn&#8217;t get away with it.&#8221; I know certain people who &#8220;get away with it&#8221; today. They dress Goth and it seems to be taken as a sign they&#8217;re very good at what they do.</p>
<p>Now that everyone in my industry has affected my mode of dress, I am pining for a way to be the rebel again. Maybe it&#8217;s time for me to find a nice blazer and tie to wear. Maybe if I get the color combinations so discordant my customers will think, &#8220;He must be the best. Otherwise how could he get away with that outfit?&#8221;</p>

<p>First pass through Tokyo. No sign of Godzilla. He must be sleeping. I hope he shows up for the interview or I&#8217;m going to be really pissed. I didn&#8217;t come all this way not to get 5 minutes with the big man himself.</p>
<p>Got to the Intercontinental Grand Yokohama this afternoon. Wicked cool place. Massive. I think the restaurants are all 5 star gourmet or something. $100/person for a meal. We went a la cart to save a little money. I don&#8217;t mind paying for a good meal, but I couldn&#8217;t enjoy it as tired as I am.</p>
<p>Mur Lafferty&#8217;s ears are burning.</p>
<p>Had dinner in the Italian place. They were very accommodating to the fact that I can barely digest anything anymore. Great roast pork and veggies. Martha had a pizza. Great food, but very expensive. Thankfully snacks and drinks aren&#8217;t that outrageous.</p>
<p>Got Martha settled in the Newsletter staff room with Matsushita-san. Met some of the staff. Sean, who we met last year, is here and he&#8217;s translating again. He&#8217;s a life saver. I actually managed to translate some japanese into english for someone contributing to the news letters. But then there was nothing else to do, so I abandoned Martha and Matsushita-san in favor of a chat with Nobilis and sleep.</p>
<p>Need to hunt up some public domain footage and audio of Godzilla and the signing of the documents that ended WWII. Need background material for my interview with Big-G.</p>
<p>The Beast is being held captive by Japanese Customs. They want money. Hopefully I can get a translator to help me in the morning. I really need The Beast back on my shoulder.</p>

The cab showed up 15 minutes early and I wasn&#8217;t able to have my normal fried egg breakfast. I rattled me so much that I forgot to grab my big camera. I didn&#8217;t realize until I got through security at National that I missed it. I am a seasoned traveller. I always use 3 bins when I go through the x-ray machine. This time I only needed two, which worried me, but I didn&#8217;t figure it out until I got to the other side.</p>
<p>I need to pay better attention to some things. I really do. Who goes on a birding trip and forgets their birding camera? Yours truly, that who.</p>
<p>As soon as I figured it out I jumped on the Coconut Telegraph and started beating the jungle drums. The tribe woke up on Tweeter and Skype and came to my rescue. Marc, a.k.a. <a href="http://www.grailwolf.com">Grailwolf</a>, offered to pick the camera up from home and ship it to me in Asia. Marc is a brave man, and is now learning how far down the rabbit hole you go when engaging in international shipping.</p>
<p>The hope is that the camera will meet me in Japan. It&#8217;s an expensive mistake, but not as bad as if I had to buy a whole new one. We&#8217;ll be bringing home a nice gift for Marc and his new bride Heather. They asked for a Japanese school girl. I don&#8217;t know what the limit is on those, we&#8217;ve got 3 requests now. I wonder if I can get them in the duty free shop. <img src='http://pfischer.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>Got to Japan and was able to get free Internet from the ANA airlines lounge which I think was a level below where I was charging my laptop. Not great throughput, but enough to get email and see that Mark and Marc had been in contact and all was being taken care of.</p>
<p>Martha and I had sushi in Narita Airport in Japan. Oh man, it was awesome. It was fresh and flavorful, and very close to the best I&#8217;ve ever had. I can&#8217;t wait to taste it outside the airport. My assumption is that airport sushi should be a 6-8 on a scale of 1-10. Which means it can be a whole lot better outside the airport.</p>
<p>The trip to Taiwan was a lot shorter than I thought it would be. Didn&#8217;t realize Taiwan is 1 hour behind Japan. So our 3.5 hour trip became 2.5 hours. We caught a gypsy cab to the hotel. For a while I thought we were being taken for a ride, but the cost was reasonable and even though I thought we were going in circles, we weren&#8217;t. The hotel was nice, and we dealt with the first leg of adjusting to the new time zone.</p>
<p>OK. The hotel was better than nice. It was actually pretty cool. And fried eggs on the American Breakfast side of the buffet were a delight. The hotel staff were amazing. They got us a cab to the bullet train to Taichung and let us pre-pay. The train hit a top speed around 300 Kph. That&#8217;s about 186 Mph! It was so smooth and fast it was awesome and very very clean.</p>
<p> Mark Forman met us at the station and took us to our hotel. Then we toured a city south of Taichung where they do a lot of fishing. That&#8217;s were the current batch of Flickr Photos were taken. Today we&#8217;re supposed to hit the electronics markets. Mark and I are going to see if maybe we can&#8217;t think of doing some things to introduce some products into the US market. Who knows, maybe we&#8217;ll find the next Tickle Me Elmo.</p>
